Breakfast

French Toast is our Fav...and easiest

We use 2 eggs for every 4 pieces of bread, then pour cream in (amount is preference)

then sprinkle cinnamon in the batter. Then when its done, we pour melted butter on it

and powdered sugar. Yummy! (Rocky uses syrup instead of powdered sugar)

Scrambled eggs with sausage or bacon.

If using a grill i will do bacon but i dont like doing bacon in a skillet, it takes too long.

Just add cream to your egg mixture and mix the eggs up. I cook them until fluffy. Rocky likes to add butter instead of cream and he likes them like not cooked all the way.

As far as omelets go, I get everything ready that i want in the omelet and i put the eggs in the pan and cook them for just a little bit then I add everything into it too. Then when its almost done, I add the cheese. 

Maybe thats the lazy way, lol. IDK

Now, I also bring quickie stuff like donuts or poptarts. If we are camping

for a whole week, I usually only do big breakfast like 2 days when we just hang around camp. Usually, we have too much too do to be doing a big one.

Lunch

 

We personally don't eat a lunch usually. When we do it's usually left overs or sandwiches.

I love doing a pork tenderloin for dinner one night then using those left overs to do pulled

pork sandwiches. Get some small buns, pull apart tenderloin leftovers then add your fav bbq sauce. 

Same with sloppy jo's. We cheat though and just get the canned stuff.

You can also do pre-made salads then just add dressing at the camp.

You could also have hotdogs ready then use a stick and cook it over the fire. We use the extension sticks for hotdogs or smores. I have awful balance, I am always scared that I am

going to fall into the fire. .

The alltime fav of chicken salad sandwich. Hard boiled eggs, mayo, mustard, chicken is always a quick and yummy lunch you can fall back on.

 

Dinners

It's always good to do crockpot dinners or dutch oven over the fire.

Pork tenderloin is one of my fav's to make. I put like  1/4 olive oil in with garlic cloves chopped up, seasons, onions and beef broth.4-6 hours, When the tenderloin is done then i add a few tablespoons flour or corn starch and cook a little longer then when it's a gravy consistancy, your ready! We like it pretty simple.

Another recipe is the 1/4 cup olive oil with the garlic cloves, 1 tsp sage,

1/2 tsp salt, 1/4 tsp pepper, 1/2 cup water, 1/2 cup brown sugar, 1TB cornstarch, 1/4 cup balsamic vinegar, 2 TB soy sauce. Then cook for 4-6 hours.

Ofcourse, An easy dinner would be to cook hotdogs and brats over the fire with the extension sticks. Then have your garnishes and buns ready!

 

Good ol' grilled hamburgers. Again, get your buns, cheese, and garnishes ready and bon appetit.

Grilled kabobs! Get all your favs and stick them on.

Sides

Steamed broccolli. We use a large piece of aluminum foil, cut up the broccolli into bite size pieces then spray olive oil all over it, fold up the aluminum all around the broccolli then poke a few holes with a fork,

Grilled corn can be done by covering the corn with aluminum foil and put it in the grill for approx. 30 minutes. You can also leave the shuck on and just put it on the grill that way.

Grilled scampi is great to also put inside an aluminum foil packet with butter,garlic, italian seasons. Poke holes in aluminum and put it on grill for about 10 minutes. OR you can just use kabob sticks to put them on and put them on the grill until they are like pink in color.

We also like to make aluminum pouches for potatos wedges and mushrooms to go with steaks. 

Before we even leave the house, we wrap some potatoes so we can grab them and put the on the grill anytime we need a side. Great in a pinch!

Ingredients

3 cups shredded cheddar

pack of cream cheese 8oz

2 cloves garlic (we luv some garlic)

1 cup lager beer

salt and pepper to your taste then throw it in a deep cast iron skillet and heat till melted.

Yummmm! Great with soft pretzels, hard pretzels, chips, or little bagettes.
